Zucchini Bread


- 2 cups shredded zucchini
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 cup vegetable oil
- 1/2 cup unsweetened applesauce
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 teaspoons vanilla extract
- 3 eggs


1. Preheat the oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
2. In a large bowl, combine the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
3. In another bowl, mix together the vegetable oil, applesauce, sugars, vanilla extract, and eggs until well combined.
4. Stir in the shredded zucchini.
5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
6. Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
7. Allow the zucchini bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Slice and serve.
