Shiitake Risotto

Need mushrooms, rice, wine dregs, broth and other ingredients you should always have on hand.

Put this stuff in a Pressure cooker fry pan on medium high heat.

4 Tbsp olive oil
4 Tbsp butter
1.5 Cups chopped Shiitake
Salt and pepper
Evaporate and brown

Add half an onion and some garlic
Add 1-1/2 cup rice

Brown the rice a little before adding the rest:
2 tsp soy sauce
1 Tbsp miso paste
3/4 cup white wine
4 cups broth
Add some herbs and more s&p

Pressure cook low for 5 minutes or longer depending on rice type then natural release. 

Add Parmesan and serve.
