Shepard's pie


- 1 lb ground beef or lamb
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, peeled and diced
- 1 cup frozen peas
- 1 tsp dried thyme
- Salt and pepper, to taste
- 3 cups mashed potatoes
- 1 cup beef or chicken broth
- 2 tbsp butter
- 2 tbsp flour


1. Preheat oven to 375°F.
2. In a large skillet or Dutch oven, cook ground beef or lamb over medium heat until browned. Drain fat.
3. Add onion, garlic, and carrots to the skillet and cook until softened, about 5 minutes.
4. Stir in frozen peas, thyme, salt, and pepper.
5. In a separate small saucepan, melt butter over medium heat.
6. Whisk in flour and cook for 1 minute, stirring constantly.
7. Gradually stir in beef or chicken broth and cook until thickened.
8. Pour the broth mixture into the skillet with the meat and vegetables and stir to combine.
9. Spread the mashed potatoes over the top of the meat and vegetable mixture.
10. Bake for 25-30 minutes or until the top is golden brown and the filling is hot and bubbly.
