Pizza Dough

Miss Lauren Pizza Dough

3.5-4 cups bread flour
1 tsp sugar
1 envelope instant dry yeast (2.25 tsp yeast)
2 tsp kosher salt
1.5 cups water @110 degrees
2 tbsp olive oil

1) combine flour, yeast, salt in a bowl (large one, i.e. stand mixer size). 
While mixing, add water and 2 tbsp olive oil. Beat until it forms a ball.  
Add flour, 1 tbsp at a time if too sticky; add water, 1 tbsp at a time if too dry.

2) Gently knead into a smooth, firm ball on a lightly floured surface

3) Grease bowl with remaining 2 tsp olive oil.
Add dough, cover with plastic wrap, and pin in a warm area to rise (approx 1 hr)

4)Turn te dough out on a lightly floured surface + divide into two equal pieces
Cover with a clean towel or plastic wrap and let rest for 10 minutes
