Peanut Butter Cookies


- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup creamy peanut butter
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt

1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. In a large mixing bowl, cream together the butter, granulated sugar, brown sugar, and peanut butter until light and fluffy.
3. Add the egg and vanilla extract and mix well.
4. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
5. Add the dry ingredients to the wet ingredients and mix until well combined, but do not overmix.
6. Using a cookie scoop, form dough into 1-inch balls and place them 2 inches apart on the prepared baking sheet.
7. Use a fork to gently press down on the dough balls to flatten slightly and create a criss-cross pattern on top.
8. Bake for 8-10 minutes until the edges are golden brown.
9. Allow the cookies to cool on the baking sheet for 5-10 minutes before transferring them to a wire rack to cool completely. Serve and enjoy!
