Oatmeal Cookies


- 1 cup unsalted butter, at room temperature
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3 cups old-fashioned rolled oats
- 1 cup raisins or chocolate chips (optional)

1. Preheat the oven to 350 degrees F (175 degrees C).
2. In a large bowl, cream the butter, brown sugar, and granulated sugar together until light and fluffy.
3. Beat in the eggs one at a time, then stir in the vanilla extract.
4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
5. Gradually stir the dry ingredients into the butter mixture until fully incorporated.
6. Stir in the oats and raisins or chocolate chips (if using).
7. Drop the dough by spoonfuls onto a baking sheet lined with parchment paper.
8. Bake for 12-15 minutes or until lightly golden brown.
9. Remove from the oven and let cool for 5 minutes before transferring to a wire rack to cool completely.
10. Serve and enjoy!
