Kale Salad


- 1 bunch of kale, stems removed and chopped
- 1/4 cup olive oil
- 1 lemon, juiced
- 2 cloves of garlic, minced
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
- 1/4 cup dried cranberries
- 1/4 cup chopped walnuts


1. In a large mixing bowl, toss the chopped kale with olive oil, lemon juice, garlic, salt, and pepper.
2. Massage the kale with your hands for a few minutes to help tenderize it.
3. Add in the Parmesan cheese, dried cranberries, and chopped walnuts, and toss to combine.
4. Serve the kale salad immediately or let it marinate in the fridge for a few hours before serving.
