Chicken Katsu

- 4 boneless, skinless chicken breasts
- Salt and pepper
- 1 cup flour
- 2 eggs
- 1 cup panko bread crumbs
- Vegetable oil

1. Preheat oven to 400°F.
2. Begin by seasoning the chicken breasts lightly with salt and pepper.
3. Put the flour in a shallow dish.
4. Beat the eggs in another shallow dish.
5. Place panko bread crumbs in a third shallow dish.
6. Dredge the chicken first in the flour, then dip it into the egg mixture, and finally coat it liberally with the bread crumbs.
7. Heat vegetable oil in a skillet over medium-high heat. When hot, add the chicken and cook until golden brown on both sides, about 3-4 minutes per side.
8. Place the chicken on a baking sheet and bake for 15-20 minutes.
9. Serve hot with tonkatsu sauce or ketchup. Enjoy!
